Tasty Cheese Spread Appetizer

Ingredients
500g cheese bits (use your favourite cheeses - we used Extra Creamy Goudaand Maple Dale Old Cheddar)
1 clove garlic peeled
2 tbsp fresh herbs of your choice
(you can also try chopped fresh dill, green onion or spinach)
1 tbsp unsalted butter (if you are using creamy cheese skip this ingredient)
Generous grind of Black Pepper
¼ to1/3 cup dry white wine /white grape juice/apple juice/beer or vegetable
broth/cream (red wine looks horrible in this mixture)
Salt to taste
Preparation
Remove any rind from cheese. Grate firm cheeses and roughly cube other
cheeses. Put everything, except the wine and salt, into a food processor and mix
until just combined. Add the wine a little at a time until the spread reaches the
desired consistency. Taste the mixture and adjust the seasoning if necessary (add
the salt here if desired). Keep in mind that the cheese with the strongest flavour
can take over the mixture so mix cheeses accordingly. For instance, if you are
using a blue cheese try not to use as much of the blue as you would more mellow
cheeses, unless you prefer the strong flavour.
The mixture can be served at room temp or warmed, where the flavour tends
to be mellower. Serve with veggies and crackers or spread on a nice toasted
baguette. Try spreading the mixture onto baguette slices then pop under the
broiler until the cheese is bubbling and brown.
Another suggestion is using the spread for a gourmet grilled cheese and served
with a crispy sliced apple or some raw veggies.
