Teri's Stuffed Dates!

Posted: Tuesday, April 14th, 2009

I feel really lucky these days when I head out on interviews in search of new information, tips, exercises and food that can help our overall health and well being. My family is noticing the difference in some of the foods I buy, the snacks I make and the foods I prepare. My hope is that many of you are also changing some of your buying habits as well as your eating habits as well. Teri Gentes has some great ideas for healthier snacks that I wanted to pass on. Here is what we had on this morning:

Super Satisfying and Nutrient Supporting Snacks

Rich in:

  • Quality amino acids
  • Healthy essential fatty acids
  • Vitamins, minerals, and antioxidants
  • Fibre and fabulous flavours…

TRG's Stuffed Dates

  • Mid Eastern Boxed or Medjool Dates
  • Nut or Seed butter
  • Raw walnuts, almonds or pecans
  • Dark Chocolate
  • Seasonings and Spices such as: cinnamon, ground cardamom, ground coffee beans, cayenne pistachios, etc…
  1. Pit the dates, spoon in a little nut or seed butter, a little piece of chocolate and or nut of your choice and gently press together.
  2. Sprinkle with chosen spices, finely chopped pistachios or ground coffee and enjoy.

These can be made ahead and frozen. The nut and nut or seed butter combo makes this a perfect fast food snack that is even better that a store bought power bar. The quality protein and essential fatty acids along with the cinnamon makes for a slower and sustained energy release keeping you satisfied longer.

Another great tip is to take nuts, (pecans, walnuts) and in a bowl, added some hemp oil, flax or salba seeds and real maple syrop. Mix it up and then spread it out on a baking sheet. Put them in the oven at around 300 degrees for about 8 minutes and you've got yourself a fun, tasty and nutritional snack. My family has been taking them by the handful!
